These delicate almond tuiles are the ultimate secret weapon when your dessert needs that final touch. Ready in just 30 minutes and made with only 6 simple ingredients you probably already have at home, they bake into thin, golden crisps – beautifully light and irresistibly crunchy.
They add the perfect texture and elevate any dessert to the next level. I love pairing them with white chocolate mousse, apples, and a scoop of caramelized walnut ice cream – a stunning balance of sweetness, fruit, and crunch.
While the classic version uses flaked almonds, feel free to get creative: try black sesame seeds, chopped pistachios, or even toasted hazelnuts for a unique twist. It’s completely up to you.

Sift the powdered sugar and flour into a bowl. Add the remaining ingredients and briefly mix with a hand mixer until a smooth batter forms.

Spread the batter thinly onto a silicone baking mat. Leave enough space between each portion, as the mixture will spread slightly during baking. Keep the edges of the mat clear.

Sprinkle the surface with flaked almonds. You can also use black sesame, chopped pistachios, or other finely chopped or sliced nuts. Just make sure they are not used whole.

Bake in a preheated oven at 180 °C (356 °F) for about 5–6 minutes, or until golden brown. Baking time may vary depending on how thinly the mixture was spread. Tip: Leave the oven door slightly open after baking – this helps the tuiles finish crisping up in the center as they cool.

Let the tuiles cool for just a few seconds after baking, then flip them onto a work surface. If some butter leaks out while baking, just gently dab it off with a paper towel.

Carefully peel off the silicone mat and break the tuiles into crispy shards.

Store the tuiles in an airtight container with silica gel packets – this will keep them perfectly crisp even on warm or humid days.
However, they taste best when enjoyed fresh on the same day they’re made.
